2 fresh zucchinis, washed and cut into pieces
1 medium eggplant, washed and cut into pieces
2 fresh red peppers, seeded and cut into pieces
1/2 red onion, chopped

Steps:
1. Preheat oven to 400 degrees. Prepare vegetables and toss in a large bowl with olive oil and salt.

- 1 pound frozen strawberries
- 1 cup low-fat Greek yogurt

Steps:
