Today's recipe comes from Julie's Kitchen: Quinoa with Roasted Veggies! Quinoa is a complete protein, meaning it contains all the amino acids needed for your healthy nutrition. It's high in iron and calcium, and is jam-packed with manganese, magnesium and fiber!

Ingredients
1 medium eggplant, peeled & diced into 3/4" pieces
1 large red bell pepper, diced into 1" pieces
1 large yellow bell pepper, diced into 1" pieces
1 large red onion, peeled and diced
4 cloves garlic, minced
2/3 cup Piping Rock Extra Virgin Coconut Oil (http://bit.ly/1z8hNXt)
3 tsp Piping Rock Himalayan Salt (http://bit.ly/TPvav5 )
1 tsp ground black pepper
1 16 oz. package of Quinoa (http://bit.ly/Ve2Gfm)

Dressing Ingredients
2/3 cup lemon juice
2/3 cup olive oil
2 tsp Himalayan Salt
1 tsp ground pepper

Steps
1. Preheat oven to 425 degrees. Toss eggplant, peppers, onion and garlic with your oil, salt & pepper. Place on a large baking sheet or stone & roast for 20-30 minutes until lightly browned, tuning once.
2. Meanwhile, follow the steps for cooking the quinoa on the package & transfer to a large serving bowl. Prepare your dressing.
3. Add the roasted veggies to the quinoa, toss with dressing and enjoy!

Tip: We added some fresh spinach to turn this dish into a salad!

1. Preheat oven to 400 degrees. Prepare vegetables and toss in a large bowl with olive oil and salt.
2. Arrange on a foiled pan and roast until the vegetables are slightly browned and tender (about 20-30 minutes), turning once.

Ingredients:
2 medium eggs
1/4 tsp baking powder
1/4 cup unsweetened almond milk

Ingredients:
- 1 pound frozen strawberries
- 1 cup low-fat Greek yogurt
- 1/2 teaspoon vanilla extract
- 1/4 cup Better Stevia natural sweetener (bit.ly/1paKtLo)
- Fresh strawberries and mint leaves

Steps:
1. Add 1 cup of the frozen strawberries to your food processor and pulse until finely chopped. Remove strawberries and add them to a large mixing bowl.
2. Add the remaining strawberries, yogurt, Better Stevia and vanilla to the processor and puree until it is nice and smooth.
3. Combine with the chopped strawberries in the large bowl and mix until everything is combined and even.
4. Cover the bowl and place in the freezer for about 1 hour, or until the sorbet is firm, but not hard.
