Our selected students from Poland and Sweden had the opportunity to hold a videoconference this December. They introduced themselves and talked about their favourite sports and types of food they eat to be healthy. At first , they were somehow shy but later gained confidence and did it better. They also sang carols in English, Polish and Swedish. There were some technical problems at the beginning but later we managed. Thank you Patrick for your full commitment to the task!

This December as was planned for the local activities, our students (Maria and Maja) made a really interesting film about a healthy Christmas dish in Poland. We do hope you can copy the recipe and try it in your countries- enjoy it!!!

Mental health is extremely important for the state of our minds. Our students organised an evening with beauticians invited from a local secondary school. They had the opportunity to enjoy some make ups and amazing hairstyles having a lot of fun and joy at the same time. They also enjoyed some relaxation techniques like Yoga and many others. It was an incredible experience. Our partners will surely copy these good practices!

During Cristmas time, there is a plate with gingerbread cookies, tangerines and candy on every Estonian family´s table.
Although there is ready-to-bake gingerbread cookie dough available in all major grocery stores in Estonia, people often prefer homemade version.
Today I will send traditional version and one more healthy version for you.


250 g margarine
1 cup sugar
1 cup dark malt
2 tsp ground cloves
2 tsp cinnamon
1/2 tsp ground ginger
2 tsp cocoa powder
2 eggs
1 tsp salt
5 cups all-purpose flour
Icing: 1 egg white, 2 cups icing sugar, a few drops of lemon juice.

Mix margarine, sugar, spices and malt in a saucepan and bring to a boil, stirring constantly. Remove from heat and cool.
Whip with electric mixer until fluffy.
Add eggs one at a time and continue to mix. If you prefer crispy gingerbread cookies, mix the dough as little as possible.
Wrap dough into plastic wrap and refrigerate, at least, until next day, but it can be refrigerated for up to 2 weeks.
When ready to cut cookies out and bake, preheat oven to 175°C.
Roll 1/3 of dough on lightly floured surface until thin and cut cookies out with cookie cutters. Bake for 6-8 minutes.
To make icing, combine all ingredients.
Whip and use immediately. Decorate cookies with icing.

Healthy gingerbreads

cool and crispy gingerbreads from buckwheat flour

2 cups of buckwheat flour
2 cups of almond flour
0,5 teaspoon of soda
1 teaspoon baking powder
0,5 packet of Meira gingerbread spices
( or teaspoon of cinnamon, cardamom, muscat)
0,5 cup of coconut oil
0,5 cup of sugar or agave syrup
0,25 cup of almond milk

first mix dry and wet ingredients separately, then mix all
together and pack in plastic food wrap
Put in fridge for some hours or 24 hours
Before baking take out from fridge to soften
unroll the dough, cut the cookies and bake under 180 C for about 15 minutes.
