Hace unas semanas publiqué una receta, almejas al ajillo, que era una adaptación de esta que os presento ahora. Cambia el producto y algún detalle en su elaboración.

Las gambas al ajillo es una tapa típica en toda España, la podemos ver en muchos bares y restaurantes donde te las preparan en un instante. Y esta es la virtud este plato aparte, por supuesto, del sabor inigualable que tiene.

Chocolate Eclair Ice Cream Bars.
Ingredients

For the golden Oreo crust:

24 golden Oreos, cookies and filling

5 tablespoons butter, melted

For the vanilla ice cream layer:

1 (14 ounce) can sweetened condensed milk

2 teaspoons vanilla extract

1 vanilla bean, scraped

1/4 teaspoon sea salt

2 cups heavy cream, chilled

For the chocolate ice cream layer:

1 (14 ounce) can sweetened condensed milk

1/4 cup dark cocoa powder

1/2 cup fudge brownie mix

1 teaspoon vanilla extract

1/4 teaspoon sea salt

2 cups heavy cream, chilled

For the cookie crumb topping:

8 golden Oreos

8 chocolate creme Oreos

1 1/2 tablespoons butter, melted

Instructions

Make the cookie crust:

Line a 9x9-inch cake pan with parchment paper, making sure to leave an overhang.

In a food processor, pulse Oreos until they are evenly crushed. Stir in melted butter and mix until combined. Press the mixture into the parchment-lined tin and freeze for about 15 minutes.

Make the vanilla ice cream:

In a medium bowl, combine the sweetened condensed milk, vanilla, vanilla bean and sea salt. In another medium bowl, whip the cold cream with a hand mixer until stiff peaks form. Fold a bit of the whipped cream into the milk mixture and gently combine, then fold the milk mixture into the remaining whipped cream. Smooth into the pan on top of the chilled cookie base and let sit for up to 2 hours to firm up.

Make the chocolate ice cream:

In a medium bowl, mix together the sweetened condensed milk, cocoa powder, brownie mix, vanilla and sea salt. In another medium bowl, whip the cold cream with a hand mixer until stiff peaks form. Fold a bit of the whipped cream into the milk mixture and gently combine, then fold the milk mixture into the remaining whipped cream. Smooth into the pan on top of the set vanilla ice cream layer, and let set in the freezer for about 30 minutes.

Make the cookie topping:

In the bowl of a food processor, crush the golden and chocolate creme Oreos, then stir in the butter. Work into loose crumbles, then sprinkle over the semi-set chocolate layer. Place in the freezer and leave overnight to set before cutting into squares. Insert popsicle sticks into bars if desired.

Cookie Dough Cheesecake.
Ingredients FOR THE CHEESECAKE 4 8-oz. bars cream cheese, at room temperature 1 1/4 c. sugar 1/2 tsp. kosher salt 1 tbsp. pure vanilla extract 4 large eggs, at room temperature 3/4 c. sour cream 1/2 c. heavy cream 3/4 c. mini chocolate chips, divided FOR THE CREAM 300ml thickened cream 150 ml sweetened condensed milk 1 tbsp malt syrup FOR DECORATING 3 chocolate chip cookies, crushed 8 choc chip cookies choc chips

Instructions Preheat oven to 350° and wrap a 9" springform pan in foil. Make the crust: Pat 3/4 of the cookie dough log into the bottom of the prepared pan. Make the cheesecake In a large bowl using a hand mixer or in the bowl of a stand mixer using the whisk attachment, beat cream cheese on medium, scraping down the bowl as necessary, until completely smooth, 3 to 4 minutes. Add sugar and salt and beat, scraping down bowl as necessary, until smooth and fluffy, 3 to 4 minutes, then add vanilla and beat 30 seconds. Add eggs, one at a time, beating for 1 minute after each addition and scraping down the bowl as necessary. Add sour cream and heavy cream and beat on low until fully incorporated and completely smooth, about 1 minute. Pour about a third of the cheesecake batter into the cookie dough crust then sprinkle with about a third of the chocolate chips. Add another third of the batter, followed by another third of the chocolate chips. Add the rest of the batter, smooth the top of the cheesecake, and sprinkle with the rest of the chocolate chips. Roll remaining 1/4 of the cookie dough into tiny balls and drop on top of cheesecake. Place the cheesecake in a deep roasting pan and set on the middle rack of the oven. Carefully pour enough boiling water into the roasting pan to come about halfway up the sides of the springform pan. Bake until the top is just starting to brown and only the center is slightly jiggly, 1 hour 20 minutes. Turn off oven, prop open door with a wooden spoon, and let cheesecake slowly cool in its water bath for 1 hour. Remove roasting pan from oven, then carefully lift the springform pan out of the water and remove the foil. Set cheesecake on a rack and let come to room temperature. Once completely cool, loosely cover with plastic wrap and refrigerate until firm, 4 hours, or up to overnight. When ready to serve, carefully remove the sides of the springform pan. Make the cream: add cream, condensed milk and malt syrup into a large mixing bowl. Use a hand mixer to whisk to stiff peaks. Fit the end of a piping bag with a wilton 1M tip and frost swirls of cream around the top of the cake. Sprinkle cake with crushed cookies and mini choc chips. Wedge a cookie on top of each swirl of cream and serve.
