I tried my first hard crust bread. Looked fine, but i was nervous that i was burning it so took it out of the oven too soon...raw on the inside... my chickens liked it. ;)

Japanese silky milk bread - learned this recipe from a Japanese website with the help of Google translator πŸ˜… Baked from cold oven starting from 120 C gradually increase to 180 C at 10 minutes interval.

Baked this early morning to have an early family breakfast before a busy day.
350g of white bread flour
150g of whole wheat flour
100g rye flour
420ml water
150g sourdough
10g salt
Handful mix of seeds
And some flaxseeds to sprinkle on top

Today I have tried to homemade this Italian traditional bread (Veneto Region, North of Italy), called MontasΓΉ.
It has a low hydration and a particular shape.
I have tried to do it with semolina flour and also with just wheat flour and I always prefer semolina bread!
Ingredients
1.000 g of wheat flour or semolina flour
50 g of olive oil
100 g of sourdough
20 g of salt
550 g of water
