Easy Yaki Udon for packed lunch, and my breakfast today. This quick 15-20 minutes recipe is my go to when I am out of idea on what to make for my girls. They love this recipe, or as they call it "the long white noodle with super yummy brown sauce". There will definitely be happy smiling faces as they open up their lunch box this noon!

Oven-Fried Parmesan Chicken Drumsticks - Main Dish
Ingredients
1/2 cup refrigerated or frozen egg product, thawed, or 2 eggs, beaten
1/4 cup fat-free milk
3/4 cup grated Parmesan cheese
3/4 cup fine dry bread crumbs
2 teaspoons dried oregano, crushed
1 teaspoon paprika
1/4 teaspoon black pepper
16 chicken drumsticks, skinned
1/4 cup butter, melted
Optional ingredients
Snipped fresh oregano (optional)
Lemon wedges (optional)
Directions
1. Preheat oven to 375 degrees F. Line two large shallow baking pans with foil and grease; set aside.
2. In a small bowl combine egg product and milk. In a shallow dish combine Parmesan cheese, bread crumbs, oregano, paprika, and pepper.
3. Dip chicken drumsticks into egg mixture; coat with crumb mixture. Arrange drumsticks in prepared baking pans, making sure pieces do not touch. Drizzle with melted butter.
4. Bake, uncovered, for 45 to 55 minutes or until chicken is tender and no longer pink (180 degrees F for drumsticks). Do not turn chicken pieces during baking.
5. If desired, sprinkle with fresh oregano and serve with lemon wedges.
6. Serve

Tender flat beans from my kitchen garden, tossed with a freshly dug out sweet potato, topped with a spice paste that has all the punch mustard can muster, add to that the fierceness of tiny green chilies, all of this packed up in a banana leaf parcel and steamed cooked to perfection in a pan. Had with steamed rice, this is a divine delicacy indeed and you MUST try it out.
