Filipino style Ceviche, Grilled Tuna Belly and Jowl. In NY they call it jaws or jowls. Jowls actually is the collar bone of Tuna. It has lots of tender juicy meat in "nooks and crannies" if you know how to dig in. if you're in NY City or Westchester area, ask me how to get a fresh cut of this delectable delight.

Lean and fat, marbled , tender Blue Fin Tuna belly (Otoro). Melts in the mouth when grilled. Good for Otoro Sushi too!
