Sorry to bother you all with a personal question but, I am in need for an answer. If you do not know please divert me to correct path if you can :)

There are large companies that developes software and constantly upgrade+change this software.

Imagine a senario that 20 software developers from 10 different countries in 10-15 different offices and they all are working on same project presumable different parts/sections.

How do they maintain/keep track of the versions that they create?
Do they all work on their own copy/clone of the project ?
If they do, then a server/OS etc platform provided for all ?
If so, how do they make sure that they are no conflicts between the files/lines/functions/variables ?

If there are 20 developers working on their own clones lets say project is 800 files then each alter/change 20 files & functions & variables etc it must get crazy :D

I know github provides version control or something close to it bu maintaining/keeping track of all the differences/changes must not be easy.

And the last question. How about the deployment of the changes especially on dynamic 24/7 product like gmail or any other that people depend heavly on ?

Is another team tests all these changes and deploys individually ?
Or do you just email the file to an admin and say "hey admin, upload via ftp" :D

How does a system like this work ?
If there is a name for this system/logic? 

How can I search for this or is there a link that you can provide ?
