Some thoughts for Sukkot

Shalom. I am a 45 years old Indian in Chennai. I was born and brought as a Catholic Christian and from my age of 25, I am following Judaism spiritually but not ritually on Jewish traditions as we don't have any Synagogue or Jewish community. When I approached a Rabbi in Cochin Synagogue for my conversion to Judaism, I didn't get any positive sign from him. After my marriage, we three (me, spouse and daughter) are willing to convert to Judaism to follow ritually also and to dedicate our entire life as servants in any of Synagogues. I don't know how to appeal and whom to appeal
