Well, I think you know the answer to this, don’t you? Here it is in most cases: “The sharper, the better!” Well, that is ok except that “the sharper, the better” is determined by what the knife will be used for, remember? The sharpness of the blade’s edge is directly related to the angle at which you sharpened the knife. The lower the angle on the sharpening scale, the sharper the edge will be.
