sashimi, etc., in the setting up and organization of a fusion Japanese restaurant, and even in the creation of a strong and long-lasting team made-up of professionals with appropriate qualifications.

CONSULTATION OBJECTIVES BUSINESS

- A Chef provides his expertise and know how achieved in over 10 years of activity. In the interior outfitting of restaurants and in the creation of sushi menus, the Chef organizes also the “sushi man” team needed to carry out the work.

- A consolidated knowledge and experience gained by the Chef guarantees the best quality of “sushi” on the market, having a great awareness of the raw materials used, and of the techniques of preparation of sushi and sushimi in a fusion inspired Japanese way.

- The great quality of the raw materials used to realize various types of sushi will offer the opportunity to interface with the best suppliers of Japanese products, receiving the best price/quality ratio on the Italian Market.

- Also available on request, is the possibility to learn about the fresh fish’s treatment and conservation, with blast freezers. All the appropriate materials are included.

After having seen your bar, the Chef will make a 3D project of the entire place for you. trying to give it a unique and unmistakable style and, in addition he will design the working areas of the kitchen and the sushi work table in order to ensure a clean and comfortable working enviroment for the employees optimising working spaces as far as possible.

- A distinctive feature of the Chef is the realization of new and original menus which include a very varied range of maki, from the old classic dishes of Japanese tradition, through to the more modern dishes which belong to the fusion cuisine. Not forgetting the delicious gourmet dishes prepared by using the excellences that every territory can offer. The menus, besides including sushi and sashimi dishes,

will also include a great variety of hot dishes ranging from the Japanese cuisine, to the Brasilian-Japanese cuisine and gourmet dishes created by the lively imagination of the chef, which are never proposed on Western market.

- The Chef will oversee all the steps relating to the control of every dish. The tasting, the setting in the menu, including all the FOOD COST details, with a list of each ingredient and relative weight used of the food when making ROLLS FUSION or TEMAKIS, etc…

The consultation provided will make it possible to open an exclusive and trendy restaurant, providing assistance to ensure that it will maintain a high quality in order to be immediately recognised by everyone for its particular Japanese FUSION cuisine.


- Finally, the Chef personally guaranteed for the staff selected and in the case of the resignation or retirments before of 6 months, he will provide to replace them by others of equal value and experience,

by
guaranteeing at any moment an excellent and professional staff. Obviously, this condition can be undermined if the resignation are justified by a non-compilance of the contractual conditions of the employer.
