Don't know what to do with the over ripe bananas sitting in your kitchen?

Ok my recipe is more of a banana cake than a banana bread recipe, but it is based on the banana bread recipe.

The reason is very simple. Each time I make this recipe, the complaint from the family members is always the same. It gets over too soon. So I gave up a long back and instead of using a bread baking tin I just straight away use a normal cake baking tin.

I love potatoes in any form, cooked, baked, fried, in sauce, dry. I am a true lover of potatoes. But even I know that one can’t eat just potatoes.

A couple of years back I had an interesting conversation with a colleague. She was convinced that potatoes are carbohydrates. I told her that they are a vegetable. So like anyone would have done, we googled it to see who was right.

It turned out that we are both right. They are botanically considered a vegetable but because of their starchy nature they are more of a carbohydrate. So you should not count them as one of the vegetables you eat in a day.

But nutritional values be what they may, my regular challenge is to find unique and fun ways to combine potatoes with other vegetables so that I can make a delicious (because of the potatoes duh) yet nutritious meal.

One of my creations originated the day I decided to mix of leeks and potatoes. and just for good measure to add in some bacon bits as well and my leeks, potatoes, bacon bits individual tarts was born.

BE WELL (G)ROUNDED LIKE MUSHROOMS

I love mushrooms, but only if they are cooked in a certain way. And their very existence and the way they are cultivated can give us some nice words of wisdom to live life by . Just read my subtitles :) If they are mushy, watery, or not cooked with a lot of garlic then I don't want to know about them. And I don't like them as pizza toppings either. Did you know that mushrooms are low in calories, fat, gluten AND cholesterol free, have very low levels of sodium, yet they provide important nutrients like potassium, vitamin D and more?

This is my recipe to make simple shrimp noodles. This is probably a mixture of influences of different cooking styles. I lived in Singapore briefly a long while back and I have forever been an admirer of any kind of mixed vegetable noodles since.
The best part about using a wok is that it is easier to cook the vegetables as much or as little as you like. I personally like it a bit on the crunchy side as we get a lot more vitamins and minerals this way. Its also easy to add as many vegetables as one likes in this type of mixed vegetable noodles.
