Tandoori roasted cauliflower with brown rice, mango, green beans and spinach. #simple #vegan #food #delicious

I used coconut milk and just some shop bought tandoori curry powder for the coating, left it to sit in the fridge for a few hours. I don't often pay attention to timings, but I put the cauliflower in the oven at the same time as I put the brown rice on and both were ready together.
