The red coloration is as a result of a #carotenoid known as lycopene. #Lycopene has antioxidant effects that help reduce certain cases of cancer such as prostate cancer and also confers protection from heart attack and other #myocardial infections. The lycopene determines the red pigment in veggies and tomatoes. It is most abundant in tomatoes and therefore conception of red foods supply the body with lycopene hence reducing chances of cancer to the body organs. There have been myths that cooking reduces the activity of phytochemicals however cooking indeed increases the activity of lycopene.
