Hi!  I'm new here and looking for a little help.  My daughter has been GF for nearly 6 years at this point.  Between the ages of 3-5 she had some significant issues both mentally and physically that lead us down every road until I found that a food allergy might be the problem, through a process of elimination we found out very definitively it was Gluten.  Her Pediatrician did not feel the need to test for it because her physical response was so dramatic.  So we have just maintained a GF lifestyle for her and our family.  Over the past year or so we have noticed that she is getting increasing more sensitive to cross contamination.  Also, she has developed consistent motion sickness and it would now appear a sensitivity to dairy.  This has all been in the last 3 months.  Concerned I took her to her Pediatrician and we now are going to see the Gastroenterologist in a few weeks.  My concern is that they will want to Gluten test her, even when we know that she can't have gluten.  I am prepared to put my foot down about this, because the side effects are not mild for her.  I wanted to see if anyone else had already been GF for a long time before going to see the Gastro and what types of test they asked for or what their experience was?  Thanks for any information, sorry this is long, i just wanted to paint an accurate picture.

Thanks Pete.  I will definitely check out the post on eggs.  To your point, we have noticed an increased sensitivity in her over the years.  At first it was just direct contact but then as she got a little older and as a family we went to a dedicated kitchen I noticed that when she was cross contaminated she because much more sensitive.  She has never actually been tested for or thought to have CD.  We have always just treated it as NCGS (non-celiac gluten sensitivity).  I think that is also one of my worries that perhaps with age she is progressing into something else.   Thanks again for your points.

Hi, I'm going on a school trip to Paris with my daughter in march. How easy is it to get gluten free stuff in regular supermarkets in France... Any brands that can be recommended for things like bread or other baked goods? I would like to not carry along all the food for 2 people for week trip. ;-)
So any french folks around who could help out on this questions? Or maybe even somebody from Paris? (If so - any bakery in Paris that makes GF croissants? ;-))

Thank you +Louise Pitcairn I could have thought of that myself. Doesn't help with the question of general availability of GF products in ordinary supermarkets though. As I almost expected I won't be around the corner of any of the listed stores :(

Speaking of brownies! If you take Alton Brown's standard brownie recipe (it's online - just Google Alton Brown Brownies!) and substitute in Bob's Red Mill GF All Purpose flour, it comes out absolutely indistinguishable from the original. The recipe also tolerates the substitution of margarine for butter very well, which is great because so many of us GF people are also casein-sensitive or lactose-intolerant. 

Normally I am Not A Fan of substituting an all purpose flour blend for wheat flour. It rarely does anything but fail. But in this case, there is so little flour in the original recipe, and all it really does is hold the chocolatey goodness in place, so the straight substitution works. 

Note that these are serious special occasion brownies. They use a lot of cocoa, and if you can afford expensive cocoa, it just kicks them up to major gourmand territory. Throw some dried cranberries or cherries in there, or some hazelnuts... OMG. I don't care if Martha Stewart herself came with elaborate petitfours and pastries, your brownies will be the first thing to disappear and the thing people remember the longest.

First of all Let me say I have had celiac disease for about 15 years. PF Chang's is one of those restaurants that had a gluten-free menu for about 15 years. I appreciate the fact that it was one of those restaurants so I could actually go and eat a gluten free food.

So what I pay more money I expect to pay more money they're setting aside a potion of there kitchen so that I don't get cross-contamination on my food.
 
This is what is wrong with this country this woman is getting on my last nerve.  Find something else to do find something else to someone else to sue for people who have celiac disease it's hard enough to find restaurants that are willing to do what they did.

So to the person that is sued PF Chang's I am so mad at you but you on blast but just remember that you're making it bad for the rest of us who likes to eat out at Gluten Free Restaurant. 

And you can always go to another restaurant.

No wheat, barley,oats and rye. Try a paleo diet, with plenty of lean proteins and vegetables. Keep aware and informed.

Sometimes I can tolerate gluten-free oats, and sometimes not. +Jules Shepard shares some info that might just be explaining the reasons for this. 
 
New study on the safety of oats in a gluten-free diet:

"Overall, the study concludes that a normal amount of oats are not able to induce an immune response like wheat, barley, or rye can in the vast majority of CD patients.
"Though this study supports oats as a gluten-free option for most CD patients, it is important to ensure the oats are still labelled gluten-free, as gluten cross-contamination in oats is common."

Do you enjoy oats on a GF diet? If not, consider the source. Some oat cultivars may not be as immunogenic as are others. Different manufacturers rely on different oat suppliers, so switching to another certified GF brand might help you enjoy this high fiber, nutrient-dense food again.

Getting glutened is an awful experience but it makes it worse when you eat so-called gluten free foods that are manufactured in a plant that uses wheat like many of Amy's frozen gluten free meals.  About a week ago I ate half gluten free uncured pepperoni pizza by Udis and it made me so sick.  I am at the place where I can't tolerate many processed so-called gluten free foods any longer.  Tom O'Bryan did an excellent video about these so-called gluten free foods and if I find it, I will post it here.  How many can't tolerate Amy's gluten free foods lately?  I did a search about this and many are having problems with her foods.  It ruins it for the holidays when you think you are safe from these foods and then you eat them and now you are afraid to eat much of anything lately,.

You know, now that you mention it, I was getting sick while eating her soups regularly. I just never made the connection! (Darn, and I bought more.) I'll know for sure if the stomach troubles start up again. Thanks for the heads-up!
