Sweet Treats  - 
 
Marshmallow Crispy Doughnuts

Servings: 6 large doughnuts

INGREDIENTS
30g butter (plus a bit more for greasing)
200g mini marshmallows
120g Rice Krispies

Toppings (optional but recommended):
Milk, dark, and white chocolate
Assorted sprinkles
Pink food colouring
A few tablespoons of cooking oil (to help thin out the chocolate)

PREPARATION
1. Melt butter over a low heat then add the marshmallows. Cook until melted, stirring occasionally
2. Pour marshmallow mixture over the rice cereal in a large bowl and stir to combine
3. Allow the mixture to cool, then butter your hands. Grab a handful of the mixture, shape into a ball then make a hole through the centre with your thumbs. Form into a ring doughnut shape
4. Melt chocolate, then add some food colouring if using. If the chocolate seizes up, stir in one tablespoon of oil to make it thin again
5. Dip the doughnut into the chocolate then cover with sprinkles (experiment with different flavours/colours here - We also drizzled chocolate over the top)
6. Set in the fridge for 30 minutes
7. Enjoy!

Carrot Cake with Cream Cheese Frosting

Ingredients CAKE:
2 -2/3 cups (335 g) all-purpose flour
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1 tsp salt
1-1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp all-spice
4 cups (500 g) carrots, shredded- roughly
6-8 1/4 cup (50 mL) lemon juice
2 cups (200 g) granulated sugar
1 1/4 cup (300 mL) flavorless oil (such as canola or vegetable)
4 eggs
1-1/2 tsp vanilla extract
1 cup (130 g) walnuts or pecans, chopped – (you can increase the quantity to 1-1/2 cups if you like) other optional add-ins (1 cup of chocolate chips, raisins, 1/2 cup desiccated coconut) FROSTING: 1/4 cup butter, softened 4 oz (100-115 g) cream cheese at room temp. 2 cups confectioners’ (icing) sugar 1/2 lime or lemon, juiced 1/2 tsp vanilla extract TOPPING (optional) 1/2 cup walnuts, chopped mixed with 1 tsp ground cinnamon

Let's get Cooking... Preheat the oven to 350 F and grease a 9x13 inch pan with butter. In a small bowl, stir together the dry ingredients (flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice) and set aside. In another bowl, mix the carrots with the lemon juice and set aside. In a large bowl, blend the sugar, oil, vanilla and eggs until smooth. Add the flour mixture, stirring just to combine. Fold in the carrot mixture and nuts. The nuts are optional but highly recommended. You can also add in chocolate chips or raisins if you like. Pour the mixture into the prepared pan and bake for 45-60 minutes, or until a toothpick inserted comes out clean. Cool completely before frosting. To make the frosting, blend together the butter, cream cheese, vanilla and lemon juice. Gradually add in the confectioners sugar and beat until smooth. The frosting should hold a soft peak when you lift up the whisk/beater. I like to garnish the cake with some cinnamon and chopped nuts, but this is totally optional.

RECETTE COMPLETE:
Pour 6 religieuses framboise
Ingrédients craquelin:
- 30 g farine
- 30 g sucre vergeoise
- 25 g beurre
Ingrédients pâte à choux (réduisez de moitié, pour cette recette):
- 120 g eau
- 2 g sel
- 2 g sucre
- 55 g beurre
- 65 g farine
- 2 oeufs (110 g)
Ingrédients crème pâtissière framboise:
- 4 jaunes d’œuf
- 45 g sucre
- 35 g maizena
- 350 g lait
- 35 g beurre
- 80 g confiture de framboise
- Colorant alimentaire rouge
- 7 framboises/chou - 42 framboises
Ingrédients chantilly vanille :
- 120 g crème
- 10 g de sucre vanillé
Ingrédients chantilly framboise :
- 120 g crème
- 20 g sirop de framboise
- Colorant alimentaire rouge
Etapes
Mélangez ensemble le beurre, la farine et le sucre vergeoise. Une fois la pâte bien homogène, étalez la entre deux feuilles de papier sulfurisé, retirez la feuille du dessus, détaillez des petits ronds dans la pâte à craquelin à l’aide d’une douille (ou autre petit objet rond comme le capuchon d’une bouteille d’eau) et placez au congel pour 15 minutes.
Dans une casserole, faites chauffer l’eau, le sel, le sucre et le beurre. Lorsqu’une ébullition apparait, retirez du feu et ajoutez la farine en une fois ; mélangez immédiatement et remettez sur le feu une minute afin de dessécher la pâte. Faites refroidir aux alentours des 50°C (pour être sûr que les œufs ne coagulent pas) et ajoutez les œufs un à un en mélangeant. Une fois la pâte à choux bien lisse, mettez la en poche avec une douille unie (taille : 12 fera très bien l’affaire), pochez de belles boules de la même taille que les ronds de craquelin (4 cm de diamètre). Posez par-dessus le craquelin et enfournez à 180°C pour 40 minutes (entre 30 et 40 minutes).
Pour la crème pâtissière, mélangez jaunes, sucre et maïzena. Ajoutez le lait, chauffez la préparation et comptez encore 1 minute de cuisson après épaississement de la crème (bien mélangez tout au long de cette étape). Retirez du feu, ajoutez le beurre, la confiture ainsi que le colorant alimentaire rouge. Mélangez le tout (et mixez = meilleur résultat), déversez dans un récipient, filmez au contact (afin d’éviter qu’une croute se forme à la surface de la crème) et réservez au frigo jusqu’à refroidissement total (= température du frigo). Détendez cette crème avec un fouet, pour la rendre bien lisse et mettre en poche.
Coupez les choux en 2, les fourrez de crème pâtissière framboise et posez 6 framboises sur chacun. Détaillez un cercle dans le chapeau du choux, saupoudrez de sucre glace.
Dans un bol bien froid : montez au fouet la crème avec le sucre vanillé (sucre + grains d’une gousse de vanille) et mettre en poche sans douille. Faire de même pour la chantilly framboise. Prenez une poche plus grande avec une douille cannelée (taille 12) et insérez dedans les 2 plus petites poches.
Dressez la chantilly bicolore sur les choux et recouvrez avec les petits chapeaux blancs. Enjoy !
