.                                                  Decadent Delight

3 cups of sugar
1.5 cups of milk
1/4 lb of butter (1 stick)
1/4 lb of baking chocolate (no  sugar, no milk, just chocolate)
2/3 cup powdered cocoa (just cocoa, no sugar & etc)
a sprinkle of salt
1 lb shelled almonds
1 lb shelled pecans

combine the sugar, cocoa, salt, & milk in a 13" frying pan
add butter and chocolate
heat on high, stirring constantly, running the butter around the walls to clean & 'oil' them to prevent sugar crystal issues
continue stirring as mixture boils, chocolate melts & mixes in
when bubbles get thick (drop a little in cold water & look for "soft ball")
add almonds & pecans
heat & stir until nuts cook & accept chocolate coating
pour onto (large) platter, marble slab, or whatever
allow to cool rapidly
call in the kids to clean the pan, wooden spoon, & consume the fudge

The platter shown is 20" across, and was full when the pouring was done. Alas, it did not stay that way, and this picture reflects the difficulty in keeping such things around for long.

The nuts are quite tasty, and they reduce the candy load per "serving", whatever amount that may be for you and yours. They help you maintain the pretense of having healthy, nutritious goals instead of just liking candy like the rest of us. (:

The fudge is very good without the nuts, but you didn't hear that here. (:

The camera was hand-held using existing daylight.  The half-empty platter represents the reality that taste treats like this do not last long. The shiny platter perks the picture up a bit, and the solid wood table adds respectability to an admittedly frivolous pursuit.
