How do you clean a 15 gallon cast iron cauldron when you live in a third floor apartment? Very carefully.

#castiron   #kitchenwitch   #cooking  While my familiar, Tas, looks on, dinner is prepared: salmon filets seared in a Finex cast iron skillet. The filets were coated with a simple rub of Old Bay seasoning, lots of black pepper, a little salt, and garlic powder, and seared in canola oil (only a little) until the internal temperature reached 140 degrees F. The little guy normally lives in the oven, but he's visiting the stovetop tonight while the oven is used to season a 19th century cast iron kettle.

Toasting the spices for corned beef brine.  When they start to snap, crackle and pop, they're done. For anyone who has never made their own homemade corned beef, a word of advice: DO IT! It's as easy as brining the Thanksgiving turkey. In fact, it's easier because the beef isn't as big and can be brined in the refrigerator. While store-bought corned beef is good, homemade corned beef far, far surpasses it. After you make it yourself, you will never again be satisfied with the stuff from the store! You don't have to start this early, but I'm doing three big portions of corned beef and cabbage this year; and two of them will actually be ready before March 17th. One will be in about a week and a half; one will be for a trip to see friends in New York in two and a half weeks; and the third will be for the family during the Wearing of the Green. :)
