Tiramisu is a world famous delicacy originating from Italy, more precisely from Siena or Treviso, consists usually of fine lightweight cream-based cheese, lady's finger soaked in coffee and cocoa decorative cover. As with other cakes and desserts and Tiramisu has its own variation on the theme, so they can be found with the addition of fruit, apple, strawberry or cherry. This is variation without the lady fingers, with a slight cocoa biscuits and enriched flavored Amaretto - liquor from almonds...Ingredients:
200 g sugar
1 tablespoon cooking starch (density)
160 g flour
30 g bitter cocoa
1 baking powder - 10 grams
4 egg yolks
150 g sugar
4 tablespoons amaretto (almond liqueur)
250g low fat cottage cheese
300 g cream
1 cream fix
2 tablespoons bitter cocoa
silver sugar beadsProcedure:
First Preheat oven to 180 C. Separate the egg whites from egg yolks and beat egg whites into firm shape gradually adding 100 g of sugar. Mix the egg yolks with the remaining 100 g sugar and 4 tablespoons of hot water into foamy mixture, and then add dry ingredients, flour mixed with starch, cocoa and baking powder. Top with the beaten egg whites mixture and mix all thoroughly. Pour the cake mixture into square cake mold lined with parchment paper, flatten it into an even layer and bake in preheated oven for 25 minutes (check with a toothpick if it is done). Take the cake out and cool in the mold.
For cream egg yolks beat on steam with sugar and 3 tablespoons amaretto until you get the light and dense foam. Mascarpone mix with cottage cheese, then stir in mixed cream with the cream fix and the egg yolks mixture. For aroma add into cream 2-3 tablespoons of amaretto.
Cut cooled cake in layers horizontally to get three layers of cake. The first layer put on a plate or tray , and frame it with cake mold and spread 1/3 of the cream, then repeat the procedure with the remaining two layers and cream. Leave the cake at least three hours in the refrigerator to chill.
Before serving sprinkle it thickly with dark cocoa, cut into 16 cubes, and at each cube place a few decorative silver sugar pearls.
