Butternut Squash Macaroni and Cheese is a family favorite! The sauce is incredibly smooth and creamy with a touch of sweetness that clings to every bite of pasta. This isn’t mac and cheese with chunks of butternut squash cooked into it, though. I use Campbell’s Organic Creamy Butternut Squash Soup, so it’s also much lighter than most mac and cheese recipes without sacrificing taste.

Mexican food and pizza are two "bingo" foods in my house. All I have to do is utter the word pizza and both of my kids get excited. Mexican food is almost equally as popular with them. Marrying the two in these Mexican Tortilla Pizzas was, as I suspected, a match made in heaven as far as both of my kids were concerned, especially since they got to eat and make them.

These Blue Corn Chip Crusted Fish Sticks are crunchy on the outside and tender inside. I tested this dish with tilapia and orange roughy which both turned out delicious, but you could use almost any white fish available such as snapper or halibut.

I was almost done making these Chicken Pesto Wraps for my kids' lunch today when I realized they were going to be getting pizza at school. Sigh. Good thing these wraps stay fresh all day because we will be eating them for dinner tonight -- a healthy, easy to assemble Friday night meal.

Soup is good food, but Broccoli Cheese Soup is great food! When it's cold outside, few things make me feel as good as the smell emanating from a steaming bowl of heart warming soup.

Pasta Veggie Scramble is a spectacular choice for vegetarians or families on a budget since you probably already have fresh eggs in your fridge and a box full of spaghetti in your pantry. The addition of just a few fresh vegetables and some grated cheese are the only other things you'll need to produce this filling entree that's totally scrumptious and super quick to make.
