Last trip to Medellin, Colombia...I had difficulty figuring out what to cook for guests. I decided that Spanish food was solution. I bought a paella pan, and put it to really good use.

I got a hold of some heirloom pork and made some delicious ramen. I made the pork in my Instant Pot!

Recently, for Chinese New Year, I made a couple of roast ducks and potstickers from scratch. This includes hand rolling out the dough for the skin.

This is one of my favorite dishes to make on Fridays...which is now officially called "Thai Friday." This is made with coconut milk, kabocha pumpkin, cashew butter, chili, and soy and salt for taste. I use fish sauce, but you can skip that if you're looking to make this vegetarian. There is no meat in this dish though.

We freaking love fish tacos at our house but we rarely make it. I made it with snapper, which I broiled after seasoning. I found organic sprouted corn tortillas too! We don't eat a lot of corn, even organic in general.

My favorite Spring dish this season: mashed peas bruschetta with cottage and parmesan cheese. Pair with sauteed veggies...and I'm good to go! You can also use ricotta cheese too.

We recently got some farm-raised, soy and corn-free chicken... I turned it into my hubby's favorite roasted lemon chicken dish. I also tried fern wheels for the first time...tastes like okra.

Butter lettuce salad, CSA veggies and roasted potatoes with grass fed beef. Happy B-Day Hub! (There was also chocolate pudding for dessert.)
