Here is a fantastic base recipe that you can easily tweak to suit your menu (try a little extra cayenne with the mushrooms). I'm not sure if it is winter months but I can't get enough shiitake or oyster mushrooms at the moment.

Third recipe on the shortlist, my favourite so far. Easy to make, super impressive and a great gift.

I'm not a fan of shopping at this time of year so I've decided to create a shortlist of recipes that would make good holiday gifts. I'd be massively surprised if someone doesn't receive a box full of these next week.
Vegan and gluten free banana pecan shortbread cookies made with just 7 ingredients and 1 bowl. Perfectly crisp with a slight tenderness, perfectly nutty and sweet, and perfect for gifting or taking on road trips.

My love for the Vegan Corner has been stoked again by this quite lovely recipe for falafels that are baked instead of fried. My youngest helped make them, rolling the mixture into balls and coating them in breadcrumbs. I made twice as much as stated in the recipe and they went in seconds!

So this was going to be the last addition to the shortlist but I found a couple more just now. With candidates this strong an assortment seems the only course of action.
This beautifully rich Lemon Lavender Shortbread is full of zesty lemon flavour with delicious subtle bursts of floral lavender in every bite. It literally melts in your mouth and has perfect shortbread "snappability"!

Second on my shortlist is the super easy to make yet still decidedly awesome vegan coconut biscuits. I'm thinking I might make a few types now and mix them up a bit.

I am streets behind our resident baker, her love of baking is an inspiration. She will search for a recipe, acquire the ingredients and bake something quite exquisite without guide or assistance. The clearing up part might go awry but that can be forgiven and I'm sure will come with time. I have not an ounce of her talent so love to see her experiment with biscuits and cakes. Here is a glimpse into her menu, her pièce de résistance!
In my experience, brownies are one of the most difficult baked goods to make vegan and that's probably why it's taken me 3 1/2 years to come up with a recipe

I had a lovely lunch at my favourite restaurant Terre a Terre recently and tried their incredible Korean Fried Cauliflower (a far better KFC). This recipe isn't exactly the same but it is really good, enjoy!

This dish is guaranteed to go down well around our table, anything with 'crispy' in the title generally goes down well but add 'curry' in there as well and you are sure to be on to a winner.
An easy and quick curry loaded with warm ginger and spiced flavour, this crispy tofu Japanese curry is a balanced bowl of goodness.
