I'm so glad I started this sauerkraut with red cabbage, it's so pretty :) you can see the bubbles rise to the top as the bacteria exhales CO2. From what I've read the sauerkraut should ferment for at least 20 days to reach a good level of acidity and flavor. Oh, it's going to be hard to wait three weeks!

I CAN'T BELIEVE IT! FIRST TIME IN HISTORY!!

I made Kimchi AND Sauerkraut in the same night! I had to go into OVERTIME, but I made the goal. I used my largest super bowl to mix it all up. The cabbage looks wonderful. This is going to be something worth talking about for a long time.

My entire carrot harvest ended up being about half a gallon. The fermentation has begun. The brew includes garlic, ginger, hot pepper powder, salt and and a bit of organic sugar. My first ferment, kimchi, went really well and I thoroughly enjoyed eating it. These crunchy carrots are going to be a delicious, probiotic rich side to any meal.

I'm dividing my Kombucha SCOBYs. These monsters process the tea so fast that I'm often missing that "sweet spot". This batch that I started this evening is going to process with a baby SCOBY that is only about 1/4 inch thick. These bad boys that I bagged up for retirement are well over an inch thick. They spent their life getting good at something, then some young buck steps in and takes their job.

This batch of kombucha was over processed so it's a bit bitter to drink. I can use it as vinegar or sell it by the pint as starter kombucha for others to start their own SCOBYs.
