Chicken & Beer is a Korean classic and the chicken at ChiMek definitely lived up to the hype. It was crispy, moist, and finger lickin' good! Also loved the self-serve side dish section with unlimited corn, pickled radish, salad, and rice. Tasty, tasty, tasty!

Momofuku Ramen – pork belly, pork shoulder, poached egg
Momofuku - Las Vegas, NV

Got to try the famous Momofuku ramen during my last trip to Vegas and it did not disappoint! Firm and fresh noodles, good broth that was rich but not too salty, and a generous amount and variety of toppings including: seaweed, scallions, beansprouts, fishcake, shredded pork shoulder, poached egg, and DELICIOUS PORK BELLY. The pork belly was crispy around the edges and then perfectly cooked to melt-in-your-mouth level. Highly. Recommend.

Seared Scallops, Slow Roasted Pork Shoulder & Patatas Bravas
Estadio - Washington, DC

All were absolutely delicious, and I highly recommend getting them at Estadia! Special mention for the Orange Gin & Tonics - I'm not usually a gin fan but these were sooo yummy. Not pictured were the churros and Torrijas (warm Spanish toast) with almond butter and maple syrup because we devoured them too quickly :p

Located in the Walker Art Center in the Loring Park/Lowry Hill area of Minneapolis, Esker Grove is a great brunch stop. Great ambience, big windows, and of course, you're in an art museum. Plus, I enjoyed every bite of this delicious plate. Check it out!

Kobe Wagyu & Kurobuta Pork Belly Shabu
One Pot Shabu Shabu - Cupertino, California

Shabu Shabu is basically Japanese hot pot. Aside from being delicious, I love how fun Shabu is. Veggies and meat are ordered raw and cooked table side in a broth of your choosing. The veggies soak up all of the flavor of the broth and the meat comes in super thin slices so it cooks almost instantaneously!

I chose a sukiyaki broth because I like how it is both savory and sweet, but other popular flavors at One Pot are the house special, spicy kimchi & garlic miso.

Can you tell I like ice cream? The "All of them" platter at Milkjam Creamery in Minnesota has been my ice cream goal since the shop opened. Glad I finally got to try it this weekend because it definitely did not disappoint!

16 flavors plus all the toppings you could want! I honestly liked all of the flavors but my favorites were Cereal Killers (orange coriander milk w/ candied pebbles), Ridin' Duuurty (Oreo milk w/ Oreo chunks and salted peanut butter) & Turkish Coffee Toffee (cardamom coffee w/ bits of toffee).

Korean pork shoulder sandwich and dirty fries
Lardo's - Portland, Oregon

This was such a perfectly salty and savory meal. The dirty fries were HUGE and came with peppers, cheese, pork shoulder bits... Can't ever go wrong with that.

Lardo doesn't kid around with their sandwiches. The bread was so crispy, the pork shoulder was packed with flavor, and it was balanced with kimchi and some arugula. One of the best sandwiches I've tasted, highly recommend it!
