Sweet Pineapple Chutney

Recipe Link ~ http://mytrystwithfoodandtravel.blogspot.ae/2017/09/sweet-pineapple-chutney-recipe.html

For Bengalis Chutney is always emotionally yours. Chutney not served or missed during the course of a grand meal, can result in a small heartbreak of the diner. Chutney is an integral part of a Bengali meal and without Chutney being served a Bengali feast remains incomplete. Whenever a meal for guests in a Bengali house is being planned Chutney, Papad, Mishti and Doi(Sweet Yogurt) are a must. Initially it was the tomato chutney which was omnipresent in all the platters and then came Mango, Dates, Mango Leather (Aam Shotto), Kamranga ( Star fruit), Chalta ( Elephant Apple), Pineapple etc. etc. until a brigade of Chutneys was formed and this kept on growing with each passing year. Ah!!! the taste of each of these relishes are still fresh on my taste buds even to this day.

In my tiny little way I have carried on this emotional journey with the Chutney and keep these relishes, dips integrated into my food menus. As I said before that my dinning table is a small treasure chest filled with numerous chutney's, dips, pickles all homemade from scratch. It's strange but true as I open the lid of my Chutney jars and dip in the spoon, along with the tongue tapping chutney I can feel the love of the grand dames of my family coming out and enveloping not only my senses but spreading a warmth of love in my heart and mind.

This is my paternal grandmother 's recipe. It is an oilfree Chutney. One of the simplest chutney recipes that you will come across. It's sweet and tart, with distinct citrus notes. The pineapple lends it's natural tang to this chutney, ginger gives the warmth and aroma and lemon slices cuts through the sweetness making the balance just perfect.

Cauliflower Burfi

Recipe link ~ http://mytrystwithfoodandtravel.blogspot.ae/2016/10/cauliflower-burfi-recipe.html

Dear friends this is a very special sweet and extremely close to my heart. This sweet is very unique too because it is made from cauliflower, which is a rare ingredient when it comes to sweets. Cauliflower Burfi was made by the niece of India's greatest poet and writer, " The Bard Of Bengal " Nobel Laureate Rabindranath Tagore, to celebrate his 50th birthday. For those of my friends who do not know India's National anthem was written by Rabindranath Tagore. Even today every year the Kabishambardhana Barfi which means " In Honour of the Poet" in Bengali is made by his descendants to commemorate his Birth Anniversary. This is a Secret Tagore Family Recipe and I feel so lucky to know how to make it. Do give it a try and you will definitely fall in love with it just like I did.

Cooked for my Blog after a long long time and can't express how fabulous it feels. Cooking and recording every bit of the adventure I have had in my kitchen and then sharing it with you my precious readers gives me happiness which transgress all boundaries.

With Durga Puja just weeks away, the celebration has already begun in my home. Today's Bengali lunch was festive in every sense. The Brown Rice Peas Pilaf was aromatic with a very fragrant desi ghee and whole Garam Masala tempering. This was well complimented with an Aubergine Chicken Curry, with a nice and creamy texture and loads of love gone into it being an heirloom dish of my family. The meal was accentuated by the sweet and tangy Tomato Dates Chutney and Raita. Offcourse there was poppadum too.

Dear friends there is no joy greater than seeing the food you have cooked being polished off the plate in no time. I am truly grateful to a wonderful culture and rich cuisine which was a part of my growing up.

Shorshe Keema / Mutton ( Goat ) Mince in thick mustard sauce ~
Recipe link --> http://mytrystwithfoodandtravel.blogspot.ae/2016/07/shorshe-keema-recipe-mutton-goat-mince.html

Dear Friends, sharing with you an absolutely nouvelle, totally unique, a dish which I would love to serve during Eid. In other words this is a very festive dish and true blue Bengali dish. Shorshe Keema which is basically Mutton or Goat mince cooked in a mustard and coconut sauce, simmered till all the liquid disappears and served with any Indian flat-bread. I however think it tastes the best when served with luchi or poori (deep fried Indian puffed up breads). No matter with what you serve your Shorshe Keema or Sarson Wali Keema, you are guaranteed to garner a whole lot of praise for this dish. It tastes equally yum with chicken mince.
