An Easy Frittata

This protein packed #frittata is easy to make and you can customize it with whatever add ins your heart desires. My version has quinoa and paneer in it along with veggies. This is one of our favorites. Although, my husband and I didn’t grow up on it, I make it often enough as if we did. I like to season the frittata with turmeric, cumin and ginger. They really add deep flavor and it’s also quite nice that the frittata takes on a lovely yellow hue from the turmeric.

You can eat this frittata for breakfast, lunch or dinner. And, if you bake it in a muffin pan its perfect for packing up a healthy snack or on the go breakfast.

Summer breakfast of Missi Roti

Uttapam - Breakfast Pizza
Uttapam is a thick pancake made with fermented dosa batter. Some finely chopped veggies are either added to the batter or loaded on top of the batter when the pancake is being made. Not only is it a  delicious and nutritious breakfast but you can also have it as a tea time snack or even a meal with sambar and chutney. I used instant dosai mix in this recipe, which only takes few minutes to make. You can experiment with all kinds of different vegetables, I like carrot and cabbage though.
