Making these this weekend. Xi’an-style smushed lamb meatball sandwiches.

Galaxy Ice Cream Pops

Ingredient

- 3 pints ice cream, such as Halo Top Dark Chocolate, Vanilla and Salted Caramel
- 1/4 cup dark chocolate, melted
- 16 oz dark chocolate
- 1/4 cup coconut oil
- 8 oz white chocolate
- Natural food dye, such as Color Kitchen, in pink, purple and blue
- Galaxy colored sprinkles


Directions
Scoop your three ice cream flavors into a parchment lined 9x13" baking dish and smooth down with the back of a spoon.
Drizzle on the melted dark chocolate, and smooth the surface. Freeze until solid.
Using the lid of your ice cream container as a guide, punch out discs of ice cream and place them on a lined baking sheet. Insert a popsicle stick into each disc. Freeze the pops as you prep the chocolate.
In a container with a pouring spout, melt the dark chocolate and coconut oil. Mix until smooth.
Divide the white chocolate into 3 bowls and melt it, then add natural food dye in pink, purple and blue, respectively.
Pour the dyed chocolates over top of the melted dark chocolate, and cautiously mix to swirl.
Place the pops on a baking rack and pour the swirled chocolate over them.
Decorate with sprinkles.
Let set briefly, and repeat on the other side.

I've been toying with the idea of making my own porchetta style pork roast. Truth be told, I am frightened. Thankfully many places near my apartment do real porchetta, so I think I'll skip the ordeal and just walk to Heart & Trotter - https://www.theheartandtrotter.com/our-meats/ But, if you want to make your own, this recipe looks awesome.

Moroccan Meatballs with Pomegranate Glaze. I'm in a meatball mood. And a "something outrageous for dinner" mood. And a mood where a good food photo would fill a big whole I'm carrying around.

My love of food photography, in no small part, is grounded in the fact that once I have a great photo, they can't take it away from me. I cooked it. I plated and framed the food just right. And captured an electronic file that can last forever. It makes me happy.

Honey Blueberry Basil Ice Cream. I want to lose weight, so of course I shouldn't even be eating ice cream. But screw that. Blueberries are on sale everywhere here now. Be a shame not to eat them all.

Prosciutto-Stuffed Chicken. I'm hungry for some stuffed chicken. And this recipe looks really good. I'm thinking I might cook it sous vide and then sear it to finish. Seems like it should also have more mushroom gravy than I'm seeing in this photo.....
