Red Rice Dosa

Dosa is usually made gluten-free using a combination of rice and lentils. This recipe is a variation of the traditional white rice dosa. It is healthy and very tasty, slightly thicker than the standard white rice dosa. Serve it for breakfast, lunch or dinner with any chutney, lentil soup or curry. Red rice dosa is pretty sturdy, and pliable so you can easily make a wrap out of it if you are not in a mood to have it with curry.

Rosewater Strawberry Shortcake

This time of the year strawberries are plentiful and you can sniff the smell of ripe berries at almost every store. Although, I buy strawberries year round. In summer I find myself using them more often in desserts rather than just eating them straight out of the box. They are juicy and delicious, perfect to be used in a dessert- such as this strawberry shortcake. Its easy to make and brings you a refreshing flavor of rosewater.

Coconut Pandan Black Sticky Rice with Mangoes

There’s no end to the goodness in my kitchen when I bring home mangoes. I am seriously addicted. I eat one mango everyday (that’s what makes me gain weight in summer). In Canada we get four varieties, Altaufo , Haden, Keitt and Manila. Keitt is terribly expensive but the other three are more affordable to buy. I love manila mangoes very much. Even their smell is superb! The flesh is super sweet and has almost zero fiber. To me this readily available fruit is as close as I can get to mango heaven. I knew exactly how I was going to use these in a recipe. We went to a Thai restaurant for my daughter’s birthday and since then the black sticky rice pudding was on my mind. Often served with mango, this is a totally exotic dessert that is so easy to make. I love the creaminess of the pudding, and the color contrast between the black sticky rice with the white coconut cream and golden yellow of the mango.

Simple Millet Crepes
It takes time to develop a gluten free recipe that does not have a rice or nut flour and I go the extra mile to make sure that it is the best it can be. I got the inspiration for these crepes from my mother’s “Sour dough cheelas”. During summers in India when the temperature rises it isn’t unusual to find the wheat dough, getting puffy and inflated, If left uncooked for a day. It gives a sour-ish smell, too. My mom used to prepare gulgulas (sweet leavened dough dumplings) or cheelas with this sour dough. My crepes are not sour but you can make them sour-ish by adding yogurt. They are not only gluten free But also dairy free, egg free, soy free and nut free.

Sago Thalipeeth

Sago thalipeeth is a popular #flatbread throughout India and is made specially during fasting days but since I don’t follow #fast (abstaining certain foods during #Navratri), I make these whenever I fancy eating them. The dough is similar to that of #Sabudana #Vada but the end result is very different because this is cooked on a griddle instead of deep frying.
