Brown Rice Dish
A family favorite made with brown rice, peppers, onions, asparagus and Bragg Liquid Aminos. If you've never tried this all purpose seasoning sauce made from soy protein, you are really missing out. It is a lot tastier than soy sauce or tamari, with less sodium, is Gluten-free, Non-GMO soybeans, no preservatives, not fermented and great nutrition.

Sauté Peppers and Onions
A bright spot in food preparation, chopped peppers and onions set for sauté and mix with brown rice.

Yes, I am aware it is hard to see any brown rice here, ha ha! Let's just say I was delighted to get asparagus this week for 98 cents a pound so I went a little heavy on adding it to the meal. As for a recipe, I just used 1 each of green, red and orange peppers, 2 small onions, a cup of brown rice that makes enough for 4 servings, and the Bragg Liquid Aminos to taste at each bowl served.

Ooh-La-La French Brunch, Ghini's French Caffee
Roses are red,
Violets are blue,
Feed me well
and I belong to you!
A wonderful breakfast served as brunch in Tucson, Arizona. You may ask me: "Why is this in "Creations" with Food and Recipes?" Well you are viewing my favorite omelet (omlette?) in the world. When I saw "Florentine" on the menu the omelet had spinach, tomatoes and swiss cheese. So I asked to have onions and black olives added, as well. Scrumptious! The first photo shows the biscuits I ordered (perfect they were) and the side bowl of sausage gravy (not to be missed). And to top it all off, I was with my buddies Jared and Stan. Voilá!

Ham Tater Tot Casserole
Leftover ham with vegetables, cheese and potatoes, iPhone 6 Plus. Since we have a lot of leftover ham from the other day, I quickly made a casserole when I thought about another easy casserole we've made many times. For this one, I used a square metal baking pan and layered small pieces of ham on the bottom, with peas and carrots on top. Then add roasted green chilis (diced). I covered with canned mushroom soup and then about 2 1/2 cups of shredded cheddar cheese. Tater tot potatoes (frozen) are then packed to completely fill the top. Add chipotle seasoning, salt and pepper and cover with foil. Bake at 375 degrees for about 40 minutes and then remove foil. Bake about 10 minutes more until the potatoes are golden crisp on the top. Very big success here!

Zuppa Toscana Soup
This is all the fault of +Charles Gaines because he posted a link to a great recipe and photos by a food blogger named Chrisy of Homemade Hoopla. My two favorite photos are shown with this post and my previous post shows the series of 5 photos I settled on out of many. If you make this recipe, note that I mostly followed the recipe online with a few exceptions:

I had no idea what "bite-size" pieces of kale are and for that matter it seemed to me the bunch of kale listed was not supposed to be the giant bundle of kale I got at the store. (Now you know why I had all those photos of kale shared this morning, ha ha!)

My idea of the dicing size for onions and potatoes is very different and much smaller than the recipe creator shows in her video. (If you go to the article do look at the quick video! If I had done that before I made this recipe I think I may have done a few things differently.)

And I totally spaced out that I actually purchased fresh parmesan cheese for the topping: oh well! Seriously, one of the best food adventures I have ever had. This was an extraordinary soup perfect for cold, cold Phoenix, Arizona this week. Seriously cold! We are going down to 34 degrees at night and not breaking 55 during the day. So time for soup here.

Kurly Kale
The lens of my camera was right up close to the tips of these tight curly kale leaves. This photo is second to last for the kale series. Kale, Macro Curls

Kale, Organic Bunch
Woohoo, a recipe I made last night called for kale, and when I went to the local franchise supermarket I found organic kale on sale for only 99 cents a bunch! And let me tell you, it was such a lot of kale I have half it to use in another recipe. I was amazed kale can be in a type so curly, fascinating to a cook who is also a photographer. Yes, I got some fun macro photos of this bunch as well.

Turkey Hash, Close-up
Dinner last night, a cell phone photo of our famous hash we make every time we have leftover turkey. iPhone 6 Plus. This is a photo to show what I did with all that turkey I had leftover after I roasted a turkey a few days ago. That photo had thousands of views and Plus Ones, but this photo is just not quite as good. A family favorite for over 30 years, all you do is make a rich, buttery white sauce and then add onions, green pepper and throw in the turkey with Italian seasoning, bread crumbs. salt and pepper. On reflection I note that gosh, lots of my family recipes looks about like this, ha ha! Even those many dog food close-ups I have shared.

What is fun about this recipe is the reaction from people who try it for the first time and are open-mouthed in amazement. Our caregivers Alma and Jim are Mexican and Native American and were both reluctant to try this. Yet both were astonished how great this hash is. No kidding: people are blown away by a simple recipe that is open to experimentation and variations. No potatoes were harmed in this process, as there are no potatoes.

Drying Apple Slices Naturally

In New Mexico near Abiquiu, Fall 2012. My friend took apples from his orchard and hand-cut thousands and thousands of slices to dry naturally in the sun on racks he made from old window screens. Tom would fill giant screens with apple slices and haul up on his roof out in the country. Each night they would come down and he'd cover with netting. Seemed to take only a week for them to dry just right for putting away in jars for the winter.
