Khatta Meetha Teekha Kaddu/ Sweet, Sour & Spicy Squash

Every time I go back to India in the winters I load up on vegetables as much as I can. The reason is because a wide variety of vegetables are available in the winter and they are the freshest and tastiest. After coming back my body was still going through intense vegetable cravings. So, I cooked the best known winter squash, butternut in Indian style. It is one of my favorite and very simple to prepare. In India it is made with a different squash which is not available here but any sweet and firm flesh squash works for this recipe. This dish has a nice balance of tart, sweet and spicy that will engage all of your senses. It goes really well with roti (Indian flatbread), poories (fried puffed bread) and as a side with lentil and rice alike. Good thing about this recipe is that you don't need to peel butternut.

Punjabi style stuffed Tinda
Living in Canada, I find myself often dreaming about Indian #summers . Of heat and #aampanna , of #mangoes and #mulberries , of kakari (indian cuke) and #tinda (apple gourd). While a common summer vegetable in South Asia, tinda is not all that well known in western world. But with the growing demand for ethnic vegetables a lot of Canadian farmers are successfully growing such exotic vegetables, and make them available to local food stores,
Tinda is very light on digestive system and can be used in a variety of preparations. The ones those are small and tender are usually cooked whole, with a four-way split in the middle and filled with spices. The result is so enticing, that it is difficult to express in words.

Baghare Baingan /Tempered Eggplant
In honor of National heart awareness month I am sharing a recipe that your family will enjoy and your heart will love. Baghare baingan or tempered eggplants is a delicacy from the city of Hyderabad, that contains healthful nutrients from seeds and nuts. It is made with baby eggplants and is cooked twice, first shallow fried and then later cooked in fragrant and delicious gravy. I didn’t fry the eggplants prior as recommended but simmered them directly in the gravy, creating a healthier version of the traditional dish

Carrot Slaw Salad with Tangy Lemon Mustard Dressing
Unlike western countries, carrots are a cool season crop in India. Even though, I now live in Canada and can have carrots all year round but I routinely use them more in winters in about everything, from stews to pulaos, stirfrys  to smoothies and even in desserts and baked goods. One of my favorite ways to use them is in grated salads with a simple homemade lemon and mustard dressing.
