Have you ever had Mulligatawny Soup? I had it for dinner last night. It's an English soup that originated in India. It's main ingredient is red lentils which cook quickly. Also, Indian spices like curry, coriander, cardamom and ginger. I like the addition of apple which adds a touch of sweetness and lite coconut milk makes it super yummy. If you're going oil-free you could use coconut extract.
