Arctic Char Po'Boy

Cornmeal Crusted Arctic Char, Arugula Sprouts, Louisiana Remoulade

Would have been better with a real baguette, still delicious and used the last of the bread I'd baked the night before.

Still craving po'boy, might have to indulge again later in the week.

Grab some cabbage for more authentic style.

Maple Roasted Smoked Pork Hock

Oven Fries, Pea Shoots

Looking for other ways to cook with pork hocks, not involving sauerkraut. This way may take a little longer but it's still fabulous. Added bonus of winding up with a liter of smoked pork stock.

The smoked pork hock is braised first, then roasted quickly with a maple/grainy dijon glaze.

I did not eat all of this hock, it's huge. I will have to come up with something with the leftovers.

Those oven fries beat deep fried any day, less mess, crispy on the outside, fluffy soft on the inside.

CAKE!

Chocolate Dulce de Leche Hazelnut Cake

This was my crowning achievement last night. A couple of the recipes for part of the cake from the Milk Bar Pastry Chef Christina Tosi. I switched some things around an made a dulce de leche buttercream instead of the frosting that goes with another cake.

I'm going to have fun playing with these recipes, moving components around.

The original cakes are 3 tiers high, I don't have the required cake acetate to hold them while I'm making them. Two tiers is still good, easier to give away and carry. HA!

Kumquat Marmalade

The marmalade didn't set quite as firm as I prefer it, still delicious and I forgot to add the booze. I'll have to get more kumquats this weekend and try again.

Savoury & Sweet Grilled Cheese

A busy night in the kitchen last night so lazy dinner. Fig & bocconcini grilled cheese, weirdly enough while I was eating I had to salt my grilled cheese to balance the flavour. I guess in some ways not that weird considering bocconcini is a fresh, mild (I think unsalted) cheese.

I finally cracked a jar of the sweet pickled cauliflower I made in the fall. OH YUM! Love how it turned out. Sweet pickled cauliflower that used to come in the sweet pickles jar was always my fav. There was never very much of it though. Now, as an adult, I have a whole jar of it! #winning

Berbere Chicken Wings with Preserved Lemon

Niter Kibbeh Oven Fries, Baby Kale

When you want fast food but you don't want to go outside, it's snowy and cold. Also, delivered fries are shit.

Digging around in the fridge found me a couple of delicious cooking items that there wasn't a lot left to. Use em or lose em. So I did.

The Plus is gearing down hardcore, makes me sad. I'm not sure how much longer I will be bothering to post, maybe to the end, maybe not. That being said I'm still around, just at different places, if you feel so inclined:

Seared Scallops, Roasted Beets in a Roasted Cumin/Cilantro Vinaigrette

Pea Shoots

Leftover scallops, beets needing to be used, this happened. Extremely happy with how everything turned out. Tangy, sweet, earthy, salad type dish.

Uni Butter on Toast

So on New Years I managed to acquire some fresh B.C. Uni. Made a squid ink pasta, uni cream sauce with scallops, the photo's suck. The pasta was still delicious.

One lobe leftover was turned into uni butter for toast. Delicious. I'm hoping that the uni might be more available, will have to wait and see.
