Confit Buddah's Hand Lemon

I went this way for the first batch. I have more Buddah's Hand heading my way and I'll experiment more.

Pleased to find out that the pith part of the Buddah's Hand isn't bitter like regular lemon pith. The recipe actually calls for drying the candied Buddah's Hand. There wasn't time last night but I thing tonight I will dry about 1/2 of this and leave the other half in the syrup.

Buddah's Hand is really sweetly fragrant, lemony but definitely less acidic than a regular lemon.

Seared Salmon Steak

Sauteed Sweet Endive

Last night's dinner was about a little bit of experimentation. Yes, I did sprinkle a little of the Buddahs Hand lemon zest onto the salmon.

The other experimentation was sauteing sliced endive in butter and honey. The endive really was delicious but really greasy. Tweaks will be needed with that particular dish.

The Buddahs Hand lemon is extremely fragrant. More explorations to follow.

Creamy Potato Leek Soup

Time to get making a batch of chicken stock. This particular soup was made with duck stock (what was in the freezer).

Using frozen potatoes, the potatoes were frozen by accident and I didn't want to throw them out (not a fan of wasting food). So I kept the potatoes in the freezer and googled like mad to get information on how/if I could use them. Mixed information, some yes, some no. I put the potatoes straight from the freezer into water to boil, the water started going brown (twas weird). Pulled the potatoes out and peeled the skins off, chopped them and dropped them into the stock. Boiled until tender, then pureed, #win it worked.

Delicious soup!

Buddha's Hand

In the fridge, my reward at the end of the weekend to play with.

When you're friends with the produce manager and pass on your excitement about a fruit or veg. Said fruit or veg is found and brought in for purchase. Took a year, well worth the wait.

Traditional Style Eggplant Parmesan

Tomato/Roasted Red Pepper Sauce

Over the moon at how this recipe worked out. Firm not watery. Made the sauce the day before, roasted the eggplant the next day (along with putting everything together).

The panko/parm topping is a wonderful textural addition. So pleased!

Vincotto Citrus Chicken Wings

Cavolo Crosccante

Vincotto - is made by the slow cooking and reduction over many hours of non-fermented grape must until it has been reduced to about one-fifth of its original volume and the sugars present have caramelized. It can be made from a number of varieties of local red wine grapes, including Primitivo, Negroamaro and Malvasia Nera, and before the grapes are picked they are allowed to wither naturally on the vine for about thirty days.

Wings and me, yeah. A new way to flavour the chicken wings. Pleased, the flavour is delicate and delicious.

The cabbage is savoy, still able to get the locally grown variety (only another week). Mixed with bread crumbs, parm and olive oil. Roasted, completely delicious.

Lamb Meatloaf Sandwich

Basil Aioli, Baby Kale, Tomatoes, Toasted Ciambella

To those that have not had the pleasure of a meatloaf sandwich, I'm sad for you.

Lamb meatloaf recipe from Simple by Ottolenghi, half of the meatloaf is vegetables, which is good. I wasn't a fan of the tahini/lemon/tomato topping on the meatloaf (which I made the other night). I felt the meatloaf really needed something herby with it, which I will correct next time I have some.

The meatloaf itself was delish, hence the sandwich.
