Okra Curry-Low Carb and Diabetic Friendly

Okra is one of my favorite vegetables. I didn’t plant enough this year, but the ones I planted steadily produced enough for my family to feed every few days. Today’s recipe is a south Indian preparation from the last of the okra from my garden. If, like me, you prefer sour and spicy curries with a hint of sweetness you will love this one. It is very flavorful yet surprisingly easy, making it ideal for weeknights. It is traditionally served with akki roti (rice flour flatbread) or hot steamed rice. However to keep the whole meal low carb and diabetic friendly have it with red rice akki roti or porridge made with quinoa and millet.

Garden Vegetable Soba Recipe

I'm all about making real meals simple and convenient enough for a weekday. The easier and simple it is, the more likely you are to cook it and eat it. I prefer to make some sort of soup or a stirfry for days when the fridge or vegetable basket needs to be cleaned out of odds and ends. This recipe of Soba noodles is an example of how I used the garden leftovers I had on hand and supplemented fresh vegetable from the store to make a delicious, healthy and easy meal.

No Egg Eggplant Rollatini

Taking advantage of the homegrown eggplant I made this Italian dish. The eggplant is sliced into strips that are pre-baked to soften. Then the strips are rolled into tasty little cheese-filled bundles and smothered in marinara sauce. It's loaded with flavor and hearty enough to satisfy both the meat eaters and the vegetarians. Serve it as a main dish with green salad or along grilled meat or poultry or over pasta.

Cabbage Stirfry

If cooked right cabbage is one of the tastiest vegetables.
This fabulous recipe is fast, simple and made with minimal ingredients. It has the tempering of mustard seeds and Bengal gram lentils which greatly adds to its taste and texture. I often add paneer which makes it more delicious and nutritionally adequate.
It can be enjoyed as a main with roti or as a side with rice and curry, or as a filling for wraps and sandwiches.

Wadi wali Lauki/ Bottlegourd cooked with sundried lentil cakes

Bottle gourd is highly appreciated vegetables in Indian cuisine though it is not very familiar to the western world as an edible (yet!). It is rich in minerals and high in water therefore considered extremely light on the digestive system. It is used in stir fries, curries, with lentils, in desserts, soups and a lot more. This is a super simple and homey dish, but the flavors are tremendous. We Punjabis particularly love to add wadis in it. They add a lot of flavor and make the dish enjoyably spicy.

Oven Fried Arbi/ Eddoe/Colocasia

This is a dry side dish goes well along with roti, paratha or plain rice and curry.


Arbi is very hearty and nutritious root that have a sweet and nutty taste and wonderfully smooth texture. It gives itch if you don’t know how to peel it right and gets slippery and slimy once peeled and washed but don’t be put off, it doesn’t taste slimy when cooked properly. I often cook arbi in the oven to reduce the slime factor and the end result is flavorful with a texture very similar to potato.

Vegan Black Bean Burger with Mango salsa

Ditch the meat for this rich in iron, high in fiber, protein packed black bean burger, flavored with balsamic, dijon, and cumin.
