After discovering third wave coffees and talking to baristas, I discovered this phenomenon by which the flavour of a brewed coffee changes as it cools.

Sometimes, my initial impression of a coffee, when it is still hot, is not that good, but improves dramatically once the cup reaches a certain temperature. That was the case with the cup (perhaps a Colombia Santa Barbara, but I forgot to make a note) that I had at Buddy Brew in Tampa. 

I wasn't feeling it at first, but later, when it cooled some, I found it rather good.
