My plan was to find the shop described in this blog...http://revtravel.com/asia-travel/japan/pour-over-coffee-in-tokyo-chatei-hatou/
...but upon arriving in Shibuya, I could not find exit 13a and instead ended up in the Hikarie building and saw a sign for The Cream of the Crop Coffee. Unlike Western Coffee, this place had plenty of English on the menu, and the barista spoke some, so I was able to order a light roast, the Nicaragua.
Unlike the strong stuff from Western Coffee, this was more to my liking, what I have become used to from the pour over coffeehouses in America. Not my favorite, that particular cup, but I figure it was about a 6 or 6.5
Can't tell you exactly what setup they use, but it is like a Kalita Wave.
