During my last run through Denver back in February I visited Black Eye and had a great cup from a roaster called Boxcar Coffee Roasters, out of Boulder. I haven't had time to get up to Boulder, but fortunately in the last six months they came down to Denver and opened up a cafe.

The coffee is still excellent--I tried a Brasil and an Ethiopia--but I'm not a fan of their custom brewing method, dubbed the Boilermaker. It is designed to account for the lower boiling point (202) at Denver's high altitude, but it is a full immersion process that leaves more of a gritty feel to the coffee, like a French press. I prefer the smoother taste of a pour over.
