Hey all,

I'm about to start a batch of cider and I want to pick your brains. I want to add elderberries to some, which I've done in the past with some success. I'm wondering if anyone else adds similar fruit and at what point? After cider has fermented? Same time? Same question for making a hopped cider. When do you add the hops, how much and for how long?

Most commercial cidermakers add fruit and hops after fermentation to preserve more of those flavor characteristics. Just as cider loses its apple character to a certain extent, so too would any additions.

Introduction
I'm from Traverse City and have been teaching for TCAPS for almost 20 years.  I am married to a great woman, I have a daughter and we are expecting number 2 in September of 2013.
