Recipe: Mexican-Inspired Pimento Cheese Dip
Pimento cheese is all the rage right now - a Southern party snack that has made its way onto menus all over the U.S. (we just had a great version at Miami’s Yardbird http://goo.gl/raZ9S
.) Here’s our own recipe that adds a little Mexican flair to the original formula as well as the addition of a few fresh ingredients to make it pop in flavor. Not the prettiest looking dip in the world but it sure is tasty! Tune in here (http://goo.gl/SevWq

1/2 vidalia onion, minced
1 clove of minced garlic
1/2 cup of chopped cilantro
1 teaspoon ancho chili powder
1/4 teaspoon cumin
1 cup grated cheddar cheese
1 cup grated pepper jack cheese
4 ounces cream cheese
3 tablespoons chopped pimentos
1/8 cup of lime juice (about 2 limes)
Kosher salt and freshly ground black pepper
Bring the cream cheese to room temp and whip with an electric mixer for about a minute. Add the remainder of the ingredients to the cream cheese and stir to combine until smooth. Season to taste.
