This was an interesting article loaded with challenges. Chefs as guides to good nutrition is a concept that begs some comment.

Our modern foods are a problem for us today. We are getting fat by the population because our foods are grown for profits, not our ideal nutrition.

Unfortunately, Chef Talbot has not done his homework. Agave nectar is not a recommended ingredient for diabetics. Its sweetness comes from fructose which is metabolized in the liver and has little impact on insulin. Ingesting it can lead to a prolonged, elevated blood sugar level and insulin resistance in cells. This then compromises normal blood sugar responses.

There is a solution and this is to elevate the amount and variety of antioxidants in the diet.
