1994 was a very good year. For me, and for this sake.

In 1987, Shinkame from Saitama became Japan's first (legal) junmai-only sake brewery. ...Bowing deeply.

99.99% of all sake is brewed from a starter (not unlike a sourdough starter) via one of three primary methods. However, this "shubo" is brewed via the bodaimoto method! It tastes so different than most sakes. Sharper, and definitely more mysterious.
