Who we are  - 
 
Hi there!
I realised I never introduced myself here. I am Karen (aka Baking Soda) blogging or should I say "used to blog" at Bake My Day! I am from the Netherlands, baking bread since 2005 when the Panasonic bread baker entered the house. I really liked the feel of dough, the smell in the house, the fact that when it's baked it can be admired and then it's also gone. Ready for the next.
(Apart from the fact that I can't count that's another reason why I never took up a hobby like cross-stitching; that stuff stays around like forever!)
Besides being a bread baker and nowadays a somewhat reluctant blogger, I am married, mom of three teens, part time job, like to sew/quilt, like to read.

Peter Reinhart's Artisan Breads Fast (what do you think?)

Hi I am debating whether to buy another bread baking book.. yes yet another one.. looking at Peter Reinhart's Artisan Breads Fast.
I've already found a couple of recipes on line so I can test bake, see what I think. I do own a copy of Artisan Bread in 5 minutes a day and eh I'm not a fan. (Neither the Jim Lahey no knead stuff) I just keep thinking this is not real bread. Yes it is fast, yes it's yeasted but bread? 
The Jim Lahey I've tried several times dubbed it bread for dummies but no matter how I tweaked the recipe the crumb was IMHO gummy. That is not what I like to see in bread.

So, from what I've read on the net this book is about Peter's own twist on the less-kneading-still-bread trend. Basically he uses stretch and fold techniques and retarding in the fridge to get an open crumb and a rustic crust. Anyone owns the book? Opinions?
Maybe I should add that I am looking into this because I am asked to bake bread for a catering company and I'd like to have some recipes up my sleeve that with a little planning take up less hands-on time and still produce great looking bread.  (Nothing conclusive yet on the caterer but I'm already thinking ahead)

How fun that she waited and then got up in the middle of the night!  The 100% is one I've been looking at.  Now while I have to have my leg up, I'll read and be ready to have a baking spree!
