I made Ricki's Roasted Potato Salad and Emma P's Grilled Peach Courgette Walnut salad yesterday. They were both so delicious! For a lower fat/lower carb option, I substituted celeriac (celery root) in place of the red potato and only used 1/2 an avocado in the dressing. It was still very flavorful!!!!

I made Dreena's Lemony Cashew Basil Pesto last night using some leftover cashew butter I had in the fridge. I used tri-color veggie pasta and added a side of green beans. DELISH! Hubby said it is a great vegan-Alfredo alternative for him. Now that's a good endorsement! :-D
