Soooo thankful for leftover salmon! Made for a no-cook big-bad-mamma-jamma satisfying salad tonight to enjoy in the 90 degree heat! Tossed with leftover mango salsa (salmon/mango salsa was last nights din) and some beans, lots of cilantro, romaine and bell peppers. Tossed it all in a tangy lime-cilantro-honey-olive oil vinaigrette and chowed down! Since going to eat dinner in Seattle tonight was out of the question I just made a Middle Eastern/Persian dinner inspired by my new fave Mamnoon: crispy little lamb meatballs loaded with flavor from za'atar, garlic, lemon, fresh mint and basil, with fattoush salad and shamandar bi tahini. I ate it all like a salad, husband gets a toasty pita. Turned out amazing, made my own za'atar and that will not be the last time. I LOVE this kind of food because it's so vibrant and light with balanced flavors and nutrition. Lots of fresh, raw elements too. Absolutely delish! I had my son play around with some spices tonight to make his own signature blend for our chicken. Turned out pretty good! He likes the Chinese 5 spice powder a lot. :)

I had the pleasure of doing a private customized cooking class for this lovely couple in Seattle yesterday. I'm always amazed at the great people I meet this way, it was a gift to ME to get to teach them some inspirational recipes in this amazing location! Their view of Seattle and the mountains AND the water was incredible! Today we explored flavors from around the world, starting with an appetizer platter and some wine. We worked on some techniques the clients wanted to perfect as well as some quick and healthy dishes full of flavors that were new to them. We did a Spanish-paprika crispy fingerling potato cast-iron cooked and served up like amazing fries- a sprinkle of salt, spritz of lemon and a hit of fresh parsley. Perfect nibble or side dish! Move over fries. ;) Peri-peri chicken thighs with a fresh quinoa tabouli-inspired salad, Spanish roasted fish with warm fingerling potato, sweet pepper & Spanish chorizo salad. We also made Caribbean beef and sweet potato stew. Delicious day, happy clients that can't wait to throw a dinner party! Great day of "work". :)

Such a lovely, nourishing and delicious jumble to start my day! Plain Greek yogurt, a little local honey, local raspberries, semi-local peach and a bit of toasted pecans and toasted oats for some crunch. Jazzed up my normal breakfast/lunch jar with that #fresh peach this morning and it sure brings a smile to my face. #delicious #Fuel to power through the day. Today I maka da pizza pie-ya. ;) Client loves CPK BBQ chicken pizza, I love to hear what my client loves then #healthify that old fave so they can enjoy to the fullest. Organic, simple ingredients (important to them), a homemade mango-chipotle BBQ sauce, lean chicken breast, just enough cheese to make you feel like you're indulging and a few sneaky hidden vegetables. Bam. So hard to leave this one behind and it's difficult to "test for seasoning" (aka sneak a bite) on pizza. Hanging out with my sous chef (my cutie hubby in his chef coat) and wine steward (our buddy Alex) getting ready to serve up a BANANAS 4 course En Garde wine pairing meal for a group of people in Sonoma. I was "bought" at auction last year and flown down to an incredible Sonoma estate to do this. Mmmmmm. Maka my moutha wata! You know this aroma and feeling: Saturday morning pancakes. :) These are like eating a bowl of berry oats: whole oats, yogurt, honey, a banana, berries, vanilla, egg whites and some cottage cheese, the standard baking soda/baking powder/salt. Blend in a blender and you're done! Pouring some homemade berry syrup made with blueberries and dates for sweetness. This is #delicious #fuel right here. I had a lovely time at Campbell's Resort this past weekend. The room was nicely updated, clean and attractive. The pool and beach front was so fun to enjoy as well! We loved the food at the Pub as well as the bistro, hoping to have an experience at the spa next time! I held back one star simply because I felt the service (at the hotel only, the restaurants were wonderful) wasn't 100% for such a place. There were some a few minor issues and usually at places like this the impeccable service is what sets them apart and drives you back to spend the money at such a resort. Minor issues are no big deal, mistakes happen but when they do the guest should not be made to feel as if it is a hassle for the resort to fix the problem they caused. That was my only drawback but other than that a lovely place we will definitely return to simply for the location, amenities and great family time.

I popped in here for a quick bite in between appointments and I am so glad I did! I got there in time for Happy Hour and had an amazing bowl of chicken coconut soup for only $5. The other happy hour offerings looked wonderful too. I also ordered the Silver Spoon special salad with shrimp. WOW it was LOADED with shrimp and had an amazing flavor! I do wish the greens were romaine instead of iceberg, but it was still fabulous. So fresh, crisp and vibrant. The atmosphere was wonderful and the best thing was the service. You are greeted with a smile, served quickly and efficiently, there is nice music on in the background and treated well the entire time. I'll definitely be back when I'm in the area!
