Clean and dry it, and then stir fry it in olive oil until golden brown, add a bit of garlic powder, stir a bit more. Set aside. Add it into your chicken gumbo right at the end of cooking. Stir it in. The okra will be crisp and non-slimy and add a wonderful slight crunch to your gumbo. I use okra all the time in cooking. They key is to not cook it in any liquids, cook it slow enough so its own moisture can evaporate, keep it as a whole or half pieces. I don't bread it, because it is not needed. Then add it to other items only at the end.
