Good morning, Sunshines!
Marinating some of my Spicy Hoisin Apricot Chicken for dinner, only using maple instead of apricot jam for the sweet element.
Why? Because a little while back, some piece of something or other that looked like it might have been parsley or cilantro when it started out fell into our almost full jug of maple syrup, grew fooch on it, and rendered the maple useless for things like pancakes because of the slight but perceptible change in flavor, however, still useful for things like BBQ sauces and glazes after I strained out the ick, boiled the hell out of it to kill the cooties, and cooled and refrigerated it.
I'm also roasting the breast from this chicken with a simple garlic salt seasoning to use for salads and/or sandwiches later in the week.
And that's how a ten dollar chicken feeds a family of 5 for two meals with a little bit leftover, even. :)My Spicy Hoisin Apricot Chicken recipe:http://chezshinae.blogspot.com/2013/11/spicy-hoisin-apricot-chicken.html
