It's such a weird lonely feeling to work the next four days with everyone else gearing up for holiday time. This is what I do, I know, and I'm glad I have a job. still...just strange every time.

Today I prepare another simple dish and suitable for summer lunch breaks: a salad of farro topped with eggplant, fresh oregano and extra virgin olive oil.


ingredients
for 4 people


200 g of hulled barley
1 large eggplant
fresh oregano leaves (to taste according to personal taste)
1 dash of extra virgin olive oil to cook the eggplant, and just enough to flavor the dish


Preparation


Let boil the farro in plenty of lightly salted water. If we have limited time available, we can use pearl barley which cooks in about 20 minutes because it was deprived of glumetta, the outer skin of the grain; If instead we have a little time available to cook or if we want to get ahead with the preparation and cook the farro the night before, we can use the pearl barley which still has its outer coating and is much more rich in fiber. In the latter case we will have to take a soak in water for at least 1 hour and then boil the farro for about 40 minutes / 1 hour poor.

Once finished cooking, we scoliamo all in a steel bowl containing cold water and then scoliamo definitely. In this way we block the cooking.

Take a large skillet, heat it a dash of extra virgin olive oil (at will can also sauté a clove of garlic) and quickly cook over medium heat a wash eggplant and cut into cubes.
When cooked, let us go up and pour the eggplant in a steel bowl, placed on another steel bowl full of ice to block even in this case the cooking.

We combine the cooked ingredients and add the oregano and olive oil for dressing.
