KOSHA MANGSHO Recipe


1️⃣2️⃣ Days Of Deliciousness : #day6 . .

KOSHA MANGSHO . .

No Bengali feast is incomplete without some good old mutton and our all-time favourite kosha mangsho. Kosha Mangsho is essentially a dish prepared with goat meat, but you can make it using chicken too. It's a delectable combination of the ginger-garlic-onion masala falvour, made richer by the addition of yoghurt or cream in some cases. . .

Sharing my go-to recipe for this mouth-watering dish! 🤤

Some Essentials: -Mustard oil is a must -Caramelization of onion is must for taste and color,helps in thickening of gravy -People prefer more meat so use leg piece -Remove garlic flavor by cooking -Roast mutton well so that it loses its water fully.At first mutton will swell up due to water in it but as you keep cooking it will come back to its normal size -Kadhai cooked mutton is better than pressure cooked

I.Ingredients

.

300 gms mutton(100 gms bones n 200 gms bones with meat...we do not count the bones while making the curry)

50 gms Mustard oil

1 Small Dalchini

2 Tejpatta

2 Green elaichi

133 gms onion

17 gms Garlic paste

17 gms Ginger paste

37 gms Tomato

Salt to taste

A pinch of Haldi

1.5 gms Kashmiri mirch

200 ml water

15 gms ghee

3 gms Garam masala powder

II.Method

Heat mustard oil in a cooker.Add elaichi,small dalchini,tejpatta.

Then add onion chopped and brown it.

Now add ginger garlic paste,tomato,haldi,salt,red chilli powder,salt and saute well till oil separates.

Now add mutton and water.Cook for 4-5 whistles.Then take the mutton out in a pan and cook till thick.

Add pinch of garam masala powder and ghee in the end to enhance taste

Best eaten with Luchi. . . .

Aloo Posto or potato 🥔 prepared with poppy seeds paste/khus khus is a childhood favourite with every Bengali. It's a sweet and spicy curry which I can live for days on. Just give me a plate of rice and some aloo posto, and you'll witness a very happy soul! 😋🤷

Here's my take on my favourite!

Ingredients

▪️Normal oil for deep frying potatoes
▪️20 ml mustard oil
▪️20 gms khus khus paste ground
▪️4 potatoes cut and fried
▪️3 gms Sugar
▪️A pinch of Black jeera
▪️1 Green chilly



Method

▪️First peel and wash potatoes
▪️Cut potatoes into cubes and deep fry them in normal oil
▪️Grind khus khus into a fine paste using water
▪️Finally heat mustard oil.Put tempering of black jeera,add fried potatoes, khus khus paste and saute a bit.Adjust consistency with water.
▪️Add salt to taste and a pinch of sugar too.Lastly add 1 slit green chilly and finish the dish up

I loved working as a food stylist for noodles on the below picture.Whether is our humble bowl of 2 a.m. Maggi or a plate of spicy, Hakka noodles from a roadside stall - we, Indians are no stranger to noodles. And boy of boy, do we love it! 😋

Noodles are the great grandmothers of food, originating in China around 220 BCE 👵🇨🇳 The earliest known record of noodles were found about 4000 years ago! How cool is that? 😊 . .
