BodyRocker Meal of the Day: Pumpkin Spice Granola

"What better way to enjoy the fall season then with some pumpkin spice granola for breakfast. It pairs perfectly with some fruit and greek yogurt. It is packed with prot
ein and fiber to power you through the morning.

Recipe can be found here:
1/4 cup uncooked quinoa, rinsed well and pat dry with paper towel
2 cups rolled oats
1/4 cup ground flaxseeds
1/4 cup pepitas (or other seed)
1/4 cup chopped walnuts
1/2 cup dried cranberries or raisins
1/4 cup real maple syrup (or honey)
1/4 cup pumpkin puree
1 tsp oil (coconut or canola)
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp each allspice and cloves
1/4 tsp kosher salt
1/2 tsp vanilla extract

Preheat oven to 325° F.
Spread oats and quinoa out on a parchment lined baking pan. Toast in the oven 10 minutes, stirring once.
Remove the oats from the oven, pour the toasted oats into a medium bowl and add the ground flaxseeds, pepitas, walnuts and dried fruit. In a second medium bowl, combine maple syrup, pumpkin puree, oil, pumpkin spice, cinnamon, salt and vanilla. Pour over oats and stir together with a spatula. Spread onto a baking sheet and bake for 20 minutes, or until golden. Let cool on baking sheet."

Delicious meal to try by BodyRocker Joveen!!

"Had this for dinner and wanted to share. 

Brown rice medium grain 1 cup = 218 calories
Beef 95% lean 3 oz = 151 calories 
Garlic - Raw - 1 Clove (1 Tsp, 3g) = 4
Ariel white Onion 1/4 cup=13 
Tomato diced 1 cup=32 
Hunts tomato paste 1 tbs=10 calories
Dash salt=0
1 tsp ground pepper = 5
2 medium green peppers = 60 calories

Preheat oven on 350. Cook the rice, I just boil it, and set aside. Spray a pan with cooking spray 0 calories and brown the garlic and onion, then add the meat and cook it. Mix tomato paste with 1/4 water and stir, then add to pan and mix everything. Add the tomatoes, mix in the rice and salt and pepper. Stuff this stuffing inside the peppers. Put peppers in a baking dish and pour 1/5 cup water in the dish. Bake for 30 to 40 minutes. You can sprinkle a Tbs of Parmesan cheese on top if you want. I don't. 

For two bell bell peppers its only 493 calories so one pepper is 247 calories . One can be filling if served with a salad. Beats eating out."
