Lots of healthy goodness! I I found a lovely recipe on google for a healthy (meat free) polenta lasagne some months ago, here it is if you ever fancy trying it out:
Ingredients: Polenta (sliced & lightly browned), Courgettes thinly sliced, Baby leaf spinach, Cottage cheese, Pasta sauce, Low fat grated cheese, Pesto.
Preheat oven to 190C - Slice polenta into half inch thick slices & brown lightly in non stick pan. Place first layer of polenta in lasagne pan & spread with pesto. Add a layer of baby spinach leaves, then a layer of thinly sliced courgette. Next add a layer of cottage cheese followed by a layer of pasta sauce. Finish with another layer of polenta slices followed by a final layer of pasta sauce. Cover with tinfoil and cook in oven for approx 40 minutes. Take tinfoil off, sprinkle with low fat cheese, and brown under the grill. The amounts all just depend on how big your dish is really.. I usually try to make a big one and then it does a good lot of portions. I also make the layers of spinach and courgette pretty big as they will wilt down quite a bit in the oven. <3
