TexMex Cheesy Cream Corn
Who doesn't love fresh corn!  Nothing  better than that nice crunch, that sweetness of the good earth.  I have made many different types of corn salad, almost anything goes with corn, but today I was reminded of cream corn.  Wow, what a blast from the past....

A wanna-be camper.....Breakfast on the grill
I haven't camped out in a couple of decades, but that doesn't mean I don't like the "feel" of the great outdoors.  These days the closest I come to camping is cooking and grilling in my own backyard.  I have recently acquired a new found love of cooking non...

ah ha, I did find it:
Caramel Apple Dessert Chimichanga’s
by Lynn Socko
8 granny smith apples
(8) 10” flour tortillas
OR
(12) 6” flour tortillas
2 c caramel sauce, I used Smuckers hot caramel topping
2 oz almond bark, chocolate flavored
2 oz almond bark, vanilla flavored
1 ½ c chopped walnuts
Coarse sea salt
Sugar in the raw
1 c butter flavored Crisco

Pour caramel sauce into large bowl. Chop walnuts. Peel and chop apples and place in bowl with caramel, add walnuts and a couple good pinches of coarse sea salt. Stir with spoon to mix well.
Using thin flour tortillas, heat in microwave about 1 min. until easy to roll without splitting. For large chimi’s, spoon in about 4 tbsp. of caramel/apple mixture, for smaller tortillas spoon in about half as much. The amount doesn’t really matter, just be sure to NOT over stuff so you can roll them up nice and tight.
Fold over sides of tortilla and roll, lay seam side down.
Add shortening or cooking oil to cast iron or non-stick skillet. About 2“ works fine. Once oil is nice and hot, place seam side down in skillet and brown, then turn to brown other three sides.
Remove to paper towel. Allow to cool completely.
Melt almond bark (both) in separate pans, drizzle over completely cooled chimichanga’s. Sprinkle with both sugar in the raw and coarse sea salt.
